During the pasteurisation process of the LUNA soft ice cream machines, the entire ice cream mixture in the freezing cylinder is heated up to about 73 °C and cooled down again. A procedure that guarantees the production of soft ice cream of perfect hygienic quality.
A standard we keep to – and have done for about 50 years!
Another positive effect: As heating up is achieved by heating elements and not by the reversal of the function of the cooling compressor, the latter has a substantially longer service life.
